Spanish Rice

3 slices of turkey bacon, cooked, drained and crumbled.
1 tablespoon vegetable oil
1/4 cup minced onion
1/3 cup chopped green pepper
3 cups cooked rice
15 oz can of tomatoes
1-1/2 teaspoon salt
1/2 teaspoon black pepper

  • Saute onions and peppers in vegetable oil until the onion is transparent.
  • Add remaining ingredients.
  • Cook uncovered over low heat for 15 minutes or until heated through.
