RED BEAN, CHICKEN & CHEESE BURRITOS



 2 tablespoons olive oil
1-1/2 lb boneless, skinless chicken breast, cut into thin strips
4-1/2 cups water
1 pkg of Zatarain’s® Family size Red Beans & Rice
2-1/4 cup shredded cheddar cheese, divided
1-1/2 cup salsa
12 flour tortilla (8-inch)
  • Heat oil in large skillet on medium-high heat.
  • Add chicken and stir 7 minutes or until chicken is cooked through.
  • Remove from skilled.
  • Add water and bean/rice mix to skillet.
  • Bring to boil.
  • Reduce heat to low, cover and simmer 25 minutes or until rice is tender. (I often to stir about every 5 minutes. It tends to stick to the bottom)
  • Remove from heat.
  • Stir in 1 cup of the cheese.
  • Allow to stand for 5 minutes.
  • Divide the rice mixture, chicken, salsa and remaining cheese between the 12 tortilla. 
  • Fold into burritos.
  • Place in a baking sheet and cook until heated through. About 10 minutes.
Serves 12
