Protein Muffins



2 tablespoons canola oil
1 egg
1-1/2 cups unsweetened applesauce
1 cup unbleached white flour
1 cup whole-wheat flour
3/4 teaspoon baking soda
2 teaspoons baking powder
2 Tablespoons unsweetened whey protein  * I plan to use Slimfast because I have it on-hand
1/4 cup chopped walnuts
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cup raisins


  • Preheat oven to Preheat oven to 375◦. Line a muffin pan with paper liners.
  • In a bowl mix together the egg, oil, and applesauce.
  • Add the flour, baking soda, baking powder, whey powder, walnuts and spices.Mix well. 
  • Stir in the raisins.
  • Spoon the batter into the muffin pan.
  • Bake for 20-25 minutes.
  • Cool on wire racks.
