Potato Skin Poppers

3 cups of diced potatoes, cooked, drained, and cooled.
2 cups of shredded cheddar cheese
16 oz container of sour cream
3/4 cup of cooked turkey bacon pieces
1/3 cup chopped green onions
1 dash of salt
1 dash of fresh black pepper
14 flour tortillas
2 tablespoons of melted butter

  1. Preheat oven to 350°
  2. In a bowl, combine potatoes, cheese, 1 cup of sour cream, bacon, onions, salt and pepper.
  3. Warm the tortilla's then spoon equal amounts of the mixture in the center of each.
  4. Roll the tortillas burrito-style, brush with melted butter and place seam down on a baking pan.
  5. Bake for 12-15 minutes, or until golden brown.
  6. Let cool for 5 minutes, then cut diagonally into halves.
  7. Serve with remaining sour cream.
Serves 10-12 people
