Potato Cheese Puffs


2 cups of leftover mashed potatoes
2 eggs
3/4 cup shredded cheddar cheese
1/8 teaspoon cayenne pepper
1 T. Parmesan cheese
1/2 teaspoon salt


  • Preheat oven to 350◦ 
  • Grease a 1 qt baking dish
  • Set aside 1/4 cup of cheese
  • Combine remaining ingredients and beat until thoroughly mixed.
  • Put into the baking dish and topwith the reserved cheese.
  • Bake for 30 min.
* Makes 6 1/2 cup servings
