Pineapple Carrot Cookies


2 cups whole-wheat flour
1-1/2 teaspoon baking soda
1/2 teaspoon nutmeg
3/4 teaspoon ginger
1 teaspoon cinnamon
3/4 cup rolled oats
1 cup grated carrots
3/4 cup crushed pineapple, drained
3/4 cup raisins
3 tablespoons softened butter
1 egg white
1/2 teaspoon vanilla
1/4 cup unsweetened apple juice concentrate
1/2 cup unsweetened pineapple juice concentrate

  • Preheat oven to 350◦ 
  • Prepare cookie sheets with parchment paper.
  • In a large bowl, mix together the flour, baking soda, spices and oats.
  • Stir in carrots, pineapple and raisins.
  • In a separate large mixing bowl, combine the butter, egg white, vanilla and juices. Beat well.
  • Add the carrot mixture to the butter mixture. Stir until mixed thoroughly.
  • Drop the batter by teaspoons onto the cookie sheet.
  • Bake for 10-12 minutes.
