Pigs In A Blanket


This is an old polish dish. In Poland it is known as Golabki ……….”Pigs in the blanket”
This was a recipe passed down from my mom, she said she got it from her mom.
1 lb ground beef
1 cup cooked white rice (beef flavored rice-a-roni is good too)
1 small onion, finely chopped
1 egg
1/2 cup cracker crumbs or bread crumbs
1/2 small green pepper, finely diced
1/4 cup ketchup
1/2 teaspoon garlic powder
1/4 teaspoon celery salt
1/4 teaspoon basil
Salt & pepper to taste
1 tablespoon Worcestershire sauce
1 head of cabbage
1 can of tomato soup
  • Preheat oven to 350°
  • Place the head of cabbage in a pot of boiling water for 2 minutes. Remove from water.
  • Combine the above ingredients, but not the can of tomato soup. Mix well.
  • Wrap a handful of the meat mixture in a cabbage leave.
  • Place in a pan, seam side down.
  • Pour the can of soup over the cabbage/beef.
  • Cover & bake for 90 minutes.
