Mexican Meatloaf

2 lbs ground beef
2 cup crushed corn or tortilla chips
1 cup shredded cheddar cheese
2/3 cup salsa
2 eggs, beaten 4 tablespoons
(1 packet) taco seasoning
  • Combine all ingredients in large bowl; mix well.
  • Shape into a small loaf and place in crock pot.
  • Cover and cook on low for 8-10 hours.
  • 20 minutes prior to serving; make the glaze.

1/2 cup ketchup
2 tablespoons brown sugar
1 teaspoon dry mustard.
  • Mix well and spread over meatloaf.
  • Cover; switch crock pot to high and cook on high for 15 minutes.
To bake this in an oven, combine all ingredients and bake for 90 minutes. 
Spread the glaze over meatloaf 20 minutes prior to removing from oven.
