Meatloaf






Meatloaf
2 lbs lean ground beef
1 small onion, finely chopped
1 celery rib, finely chopped
1 garlic clove, crushed
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
1-1/4 teaspoon salt
1/2 cup milk
1/4 cup catsup
1 small green pepper, finely diced
1 large carrot, peeled and shredded
1 cup quick cooking oats or bread crumbs
1/2 teaspoon freshly ground pepper
1 large egg

Topping
1/2 cup catsup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon vinegar
  • Preheat oven to 350°
  • Combine all of the meatloaf ingredients.
  • Shape into a loaf shape and place in a baking sheet..
  • Bake the meatloaf for 45 minutes. (while it is cooking, prepare topping)
  • Combine topping ingredients. Set aside.
  • Remove meatloaf from oven (after the 45 min), Drain grease.
  • Spoon topping over meatloaf.
  • Return to oven and bake an additional 20 minutes.
  • Allow to sit for 10 minutes before slicing.
