Maine Potato Candy


  • 4 Cups flaked coconut
  • 4 Cups powdered sugar
  • 3/4 cups mashed potato (without milk & butter)
  • 1-1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 16 Oz. almond bark


Step 1
Combine: Sugar, coconut, potatoes, vanilla and salt. Mix well.
Step 2
Line a 9-inch square pan with foil. Grease foil.
Cover and refrigerate overnight.
Cut into 2″ x 1″ rectangles.
Cover and freeze until firm.
Step 3
In a microwave or a double-boiler, melt almond bark.
Dip bars in almond bark.
Place on wax paper to harden.
