Icebox Cake



This was a popular 1950’s cake. It consist of layers of wafer cookies and a cream mixture.
2 cups of heavy whipping cream, well chilled.
1/2 cup powdered sugar
1 teaspoon vanilla
24 chocolate wafers (can substitute vanilla or strawberry wafers)
  • Whip the cream.
  • Add powdered sugar and vanilla.
  • Spread 1 tablespoon of the cream mixture on each wafer and stack them in four stacks of 6 wafers each. 
  • Spread the sides and top of cake with the remaining cream mixture.
  • Garnish with a topping of your choice crushed chocolate candy, chocolate curls, miniature chocolate chips, crushed wafers.
  • Must be refrigerated at lest 6 hours before serving. Best if left overnight.
