Homemade Soft Pretzels



1-1/2 cup lukewarm water
1-1/8 teaspoon or 1-1/2 pkt dry yeast
2 tablespoons brown sugar
1-1/8 teaspoon salt
1 cup bread flour
3 cups regular flour
2 cups lukewarm water
2 tablespoon baking soda
Coarse salt
Melted butter
  1. Mix together 1-1/2 cups warm water & yeast and stir until yeast is dissolved.
  2. Add sugar & salt.
  3. Add flour.
  4. Knead until smooth and elastic.
  5. Let rise until double (about 1.5-2 hours)……While dough is rising add baking soda to 2 cups of lukewarm water.
  6. After the dough has risen, pinch off some dough and roll into a long rope and shape into a pretzel.
  7. Dip pretzel in soda water solution and place on a greased baking sheet.
  8. Allow pretzels to rise.
  9. Bake in 450° for about 10 minutes or until a golden brown.
  10. Remove from oven and brush with melted butter and sprinkle with coarse salt or a mixture of sugar and cinnamon.
