Hearty Beef & Vegetable Soup




4 fresh garlic cloves, finely minced
1 diced onion
3 large carrots
1 green bell pepper
3 stalks of celery
2 lbs ground beef. Cooked & drained
4 cups chicken stock
1 cup water
23 oz can crushed tomatoes
2 cups fresh green beans
4 potatoes, chopped into bite-size pieces
2 cups shredded cabbage
Shredded cheddar cheese to sprinkle on soup when serving

Combine all ingredients except for cheese. Simmer until all the veggies are tender.
