Creamy Broccoli Cheese Soup



1 quart of chicken broth or stock
2 cups milk
1 cup water
1 20 pkg of frozen broccoli
1/2 small onion, finely chopped
1/4 teaspoon freshly ground black pepper
1 cup of Velveeta, cut into 1/2″ cubes
1-1/2 cup leftover mashed potatoes  (or  1-1/3 cup instant mashed potatoes) * If you are using instant potatoes you will add this at the same time you add the Velveeta cheese.
  •  In a bowl combine the milk, chicken stock, water, and mashed potatoes. Whisk until smooth
  • Place the  broccoli, onion, & pepper in the crock pot. Add the above liquid mixture. Mix well. Cook on high for 3 hours or on low for five hours.
  • Add the Velveeta cubes  (and instant potatoes) and stir.
  • It is ready to serve when cheese is melted and thoroughly heated.
