Chicken Fried Rice


1 boneless  chicken breast-sliced in bite-size pieces
1 finely chopped carrot
2 green onions, thinly sliced 
1 finely chopped celery ribs
2 cups cooked rice
2 scrambled eggs
1 tablespoon vegetable oil
Soy sauce, to taste

  • In a skillet, brown chicken in veg oil until a light golden brown. Set aside.
  • In same skillet, add the carrots, celery and green oils. saute until tender.
  • While vegetable are cooking, scramble the eggs. Set aside
  • Add rice to vegetables.Stir well. Add soy sauce.  (you'll need quite a bit)
  • Stir in scrambled eggs.
* Any vegetable can be used.
