Baked Zucchini Boats



4 medium zucchini
1 small yellow onion, finely chopped
1 large egg, beaten
1/2 lb lean ground beef
2 cups spaghetti sauce
2 tablespoons fresh chopped parsley
1 cup cooked  rice
1 chopped garlic clove
2 tablespoons olive oil
1/2 cup bread crumbs
2 tablespoons grated Parmesan cheese.
  • Preheat oven to 350◦ 
  • Split zucchini lengthwise, soup out the seeds.
  • Saute ground beef, onion, garlic and parsley in olive oil.
  • Remove from heat.
  • Add cooked rice, beaten egg, 1/4 cup breadcrumbs and mix well.
  • Fill the zucchini with the mixture and place on baking sheet.\
  • Cover with the spaghetti sauce, sprinkle with cheese and the remaining bread crumbs.
  • Cover and bake for 45 minutes or until the zucchini is tender but firm.
