Apple Streusel Cake

2 cups flour
1 cup sugar
1 t. baking powder
1/2 t. baking soda
1/2 t salt
2 eggs
1/2 cup melted butter
1-1/4 t. vanilla
1/2 teaspoon cinnamon
3/4 cup water
1-1/2 cups (or more) peeled chopped apples

Streusel Topping
1/3 cup brown sugar
1 T butter
1/4 t cinnamon
1 T flour

  • Preheat oven to 375◦
  • Combine all the dry ingredients in a bowl. Mix well. Set aside.
  • In a separate bowl, whisk the eggs, butter & vanilla.
  • Stir in the dry ingredients. (you may need to add a bit of water to thin the batter)
  • Fold in apples.
  • Pour into a greased 13 x 9 pan.
Streusel Topping
  • Combine the above ingredients. Sprinkle over the cake
The original recipe said to bake for 20 minutes, Judy said it take longer than 20 minutes. She didn't say how much longer.
 I  will check every10 minutes after the first 30 minutes.
