
Nothing says “comfort food” more than a big pot of simmering soup on a cold blustery day. I’m currently visiting my daughter & her faily in Colorado and it’s snowing!
Hearty Beef & Vegetable Soup

Ingredients
- 4 fresh garlic cloves, finely minced
- 1 diced onion
- 3 large carrots
- 1 green bell pepper
- 3stalks of celery
- 2 lbs ground beef. Cooked& drained
- 4 cups chicken stock
- 1 cup water
- 23 oz can crushed tomatoes
- 2 cups fresh green beans
- 4 potatoes, chopped into bite-size pieces
- 2 cups shredded cabbage
- Shredded cheddar cheese to sprinkle on soup when serving
Instructions
- Combine all ingredients and simmer until vegetables are tender.
