Ingredients
- Baked Breakfast Burritos
- 1 lb bacon
- 8 fresh mushrooms sliced
- 6 green onions, sliced
- ⅓ cup chopped green peppers
- 1 clove garlic or garlic powder
- 8 eggs
- ¼ c. sour cream
- ¾ cup cheddar cheese or Monterey jack cheese
- 3 tablespoons taco sauce
- 1 tablespoon butter
- Four 9” flour tortillas
Instructions
- Cook bacon until crisp; set aside 1 tablespoon of the drippings.
- Sauté mushrooms, onions, green pepper, & garlic in drippings. Set aside & keep warm.
- Beat together the eggs & sour cream. Stir in ¼ cup of cheese and taco sauce.
- In a skillet melt the butter and add the above egg mixture to it. Stir and cook on low heat until eggs are set.
- Remove from heat.
- Crumble the bacon.
- Add the eggs to the mushroom mixture.
- Spoon equal amounts of egg mixture in the center of each tortilla. Roll up. Place seam side down.
- Sprinkle with the remaining cheese.
- Bake at 350° until the cheese is melted.
