Ethan's Pumpkin Cake


The recipe for this cake is what my grand-son Ethan chose for his 10th birthday. Everyone really enjoyed this cake, we found it to be very moist. It came out of a recipe book, that is for high altitude baking. I forget the name of the book. I have not yet tried it here in my state of WV


Cake Ingredients

2 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
½ teaspoon salt
2 teaspoons cinnamon
½ teaspoon ginger½ teaspoon cloves
½ teaspoon nutmeg
4 eggs
½ cup vegetable oil
½ cup butter
2 cups sugar
1 (15 oz) can pumpkin

Cream Cheese Frosting

4 oz cream cheese
¼ cup butter
1 teaspoon vanilla
2 cups xxx sugar

  1. Combine dry ingredients. Mix. Set aside.
  2. Combine oil, eggs, sugar and pumpkin. Mix well.
  3. Stir in dry ingredients.
  4. Pour into a greased and floured 9x13 pan
  5. Bake for 40-45 minutes
  6. When cool, frost with the cream cheese frosting.
