Blender Mayonnaise (Homemade)



1/2 teaspoon dry mustard
1 tablespoon sugar (not in the original recipe, something I want to add to my 2nd batch)
1/4 teaspoon salt
2 tablespoons vinegar or lemon juice
1 whole egg
1 cup oil (I used canola)

Combine all ingredients in a blender except for the oil.
Cover and blend for about 5 seconds.
With the blender on a slow speed add oil in a thin slow steady rate. Stop often and scrap the side of the blender. Refrigerate.

* My husband was impressed with the thick & creamy consistancy of this. I think next time I will try another type of oil (maybe peanut, I'm not a big fan of olive oil) and I plan to add 1 tablespoon of sugar. Hellman's has always been our mayonnaise of choice. But we are attempting to be more self-reliant and am trying to make whatever we can rather than purchase chemical laden processed foods at the grocery store.
