Tex-Mex Chicken Bundles




4 boneless, skinless chicken breast
Mayonnaise
1 cup cheese crackers, crushed
1/2 package taco seasoning
1 cup sharp cheddar cheese, grated
4 oz can of chopped green chilies (or) 1 seeded jalapeno, chopped
  • Preheat oven to 350°     
  • Combine crackers and taco seasoning. Mix well.
  • Spread mayonnaise on both sides of chicken breast.
  • Dredge in cracker/seasoning mixture.
  • Place 1/4 cup of cheese and some chopped green chilies on chicken breast.
  • Roll-up and secure with a toothpick.
  • Bake in oven for about 45 minutes.
* I like to make some chicken flavored rice to serve this with. Sometimes I will put 1-2 tablespoons of the flavored rice on the chicken breast before baking.
