Sweet Potato Custard



1 cup of mashed sweet potatoes
3/4 cup evaporated milk
1/4 cup brown sugar
2 beaten egg yolks
1/2 teaspoon salt
1/4 cup raisins or finely chopped nuts (optional)
1 tablespoon granulated sugar
1 teaspoon cinnamon.



  • Preheat oven to 325° .
  • Combine raisins or nuts, sugar & cinnamon. Set aside.
  • Combine remaining ingredients.
  • Pour into a greased small casserole dish.
  • Sprinkle sugar, cinnamon and raisins/nuts on top.
  • Bake for 40-45 minutes.
