Chicken Barley Bake

4 chicken breast marinated in your favorite marinade (I like Caribbean Jerk)
1 cup finely chopped onion
3/4 cup water
1/2 cup chopped broccoli heads
1/2 cup diced carrots
1-1/2 teaspoon poultry seasoning
1 clove of minced garlic
Fresh chopped parsley for garnish

  • Preheat oven to 350°
  • Combine all ingredients except for chicken and parley in a pot.
  • Let boil for 5 minutes.
  • Place in a greased 9x9 pan.
  • Arrange chicken on top.
  • Bake covered, for 1 hour or until barley is tender.
  • Sprinkle with fresh parley
