4 chicken breast marinated in your favorite marinade (I like Caribbean Jerk)
1 cup finely chopped onion
3/4 cup water
1/2 cup chopped broccoli heads
1/2 cup diced carrots
1-1/2 teaspoon poultry seasoning
1 clove of minced garlic
Fresh chopped parsley for garnish
- Preheat oven to 350°
- Combine all ingredients except for chicken and parley in a pot.
- Let boil for 5 minutes.
- Place in a greased 9x9 pan.
- Arrange chicken on top.
- Bake covered, for 1 hour or until barley is tender.
- Sprinkle with fresh parley
