1/2 cup margarine (not butter)
1 yellow cake mix (without pudding) or chocolate cake mix
3 eggs
8 oz cream cheese
1 lb of powdered sugar
1/2 cup flaked coconut
1/2 cup chopped walnuts or pecans
- Preheat oven to 325°
- Combine butter, cake mix, and 1 egg. Stir until cake mix is just moistened.
- Pat the mixture into bottom of a well-greased 15x10" jelly roll pan.
- Beat remaining eggs lightly, then add cream cheese and powdered sugar.
- Stir in coconut and nuts.
- Pour over mixture in jelly roll pan, spreading evenly.
- Bake for 45-50 minutes or until golden brown.
- Cool on a wire rack to room temperature.
