Peanut Butter Cup Cake



Cake

1 cup butter
1 cup water
2 eggs
2 cups flour
1 teaspoon baking soda
1/4 cup cocoa
1/2 cup buttermilk
2 cups sugar
1 teaspoon vanilla

  • Preheat oven to 350°
  • In a saucepan, combine butter, cocoa, water, eggs & buttermilk; stirring constantly over low heat until mixture bubbles.
  • Remove from heat.    
  • Pour into a greased 9 x 13 pan.
  • Bake for 25 minutes or until toothpick inserted comes out clean.
  • Cool completely
Mix together:

1-1/2 cups creamy peanut butter
1-1/2 tablespoons vegetable oil.

  • Spread over cake.
Frosting:

1/2 cup butter
1/4 cup cocoa
6 tablespoons buttermilk
1 teaspoon vanilla
1 lb of powdered sugar

  • Pour powdered sugar in a bowl. Set aside.
  • In a saucepan combine; butter, cocoa, & buttermilk., mix well and when it starts to bubble, remove from heat and pour over powdered sugar.
  • Beat  until smooth.
  • Stir in vanilla.
  • Pour evenly over cake.
