Blueberry Muffins With Streusel Topping


Muffins:
1/2 cup butter
2 cups flour
1 cup sugar
2 eggs
1/2 cup milk
2 teaspoons baking powder
1/2 teaspoon salt
2-1/2 cup fresh blueberries
1-1/2 teaspoons vanilla


Strudel Topping:
Combine and set aside:
1/4 cup sugar
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon cinnamon


  • Preheat oven to 3 75°
  • In a bowl; combine all dry ingredients. Mix well and set aside.
  • In a mixing bowl combine butter and sugar. Beat until light and fluffy.
  • Add eggs; one at a time.
  • Add milk & vanilla.
  • Slowly add the dry ingredients to mixture.
  • By hand, gently fold in the blueberries.
  • Line a muffin pan with cupcake liners
  • Fill liners 3/4 full.
  • Top each muffin with strudel topping
  • Bake for 25-30 minutes.
