Sweet Potato Pie


2 cups of peeled, cooked & mashed sweet potatoes
2 eggs, well beaten
1-1/4 cups milk
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
2 tablespoons rum
4 tablespoons melted butter
  • Preheat oven to 425°
  • Combine above ingredients.
  • Pour into an unbaked pie crust.
  • Cover edges of pie crust with foil.
  • Bake for 10 minutes.
  • Reduce heat to 300°
  • Bake 25 minutes.
  • Remove foil.
  • Bake an additional 25 minutes or until a fork inserted comes out clean.
