Mock Pumpkin Pie


2 cups cooked & mashed butternut squash
1/2 cup flour
1 cup sugar
1 teaspoon salt
3 eggs, beaten
2 cups evaporated milk
1 teaspoon pumpkin pie spice or "Click Here" if you don't have any on hand!
1 unbaked pie shell.
  • Preheat oven to 350°
  • Combine above ingredients; mix thoroughly.
  • Pour into an uncooked pie shell.
  • Cover edges with foil to prevent burning.
  • Bake for 25 minutes.
  • Remove foil.
  • Bake another 25 minutes until fork inserted near the center comes out clean.
  • Serve with a dollop of whipped cream.
