Frosted Covered Pumpkin Cookies


1 cup shortening
1 cup sugar
1 cup solid pumpkin
1 egg, beaten
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup raisins (optional)
  • Preheat oven to 375°
  • Combine above ingredients and mix thoroughly.
  • Bake for 10-12 minutes. While cookies are baking make frosting
Frosting    
2/3 cup margarine
1 cup brown sugar
1/2 cup milk
3 cups powdered sugar

  • In a saucepan melt butter and brown sugar.
  • Boil for 2 minutes.
  • Add milk - cook for 10 minutes.
  • Remove from heat.
  • Add powdered sugar.
  • Pour frosting onto cookies when fresh out of the oven.
