2 lbs yellow squash, peeled and cut into small cubes
1 onion, finely chopped
1 teaspoon salt
4 tablespoons butter
1/4 teaspoon freshly ground pepper
1 cup saltine cracker crumbs
1/2 cup milk
1/2 cup bread crumbs
1 cup shredded cheddar cheese
- Preheat oven to 350°
- Put squash, onion, salt and pepper in a small saucepan.
- Add a small amount of water, cover and cook until vegetables are tender.
- Remove from heat and drain.
- Stir in the butter.
- Stir int the crackers and milk.
- Place in a baking dish.
- Sprinkle with cheese & bread crumbs.
- Bake uncovered for 20 minutes or until the milk is absorbed.
