Squash Casserole #1

2 lbs yellow squash, peeled and cut into small cubes
1 onion, finely chopped
1 teaspoon salt
4 tablespoons butter
1/4 teaspoon freshly ground pepper
1 cup saltine cracker crumbs
1/2 cup milk
1/2 cup bread crumbs
1 cup shredded cheddar cheese
  • Preheat oven to 350°
  • Put squash, onion, salt and pepper in a small saucepan.
  • Add a small amount of water, cover and cook until vegetables are tender.
  • Remove from heat and drain.
  • Stir in the butter.
  • Stir int the crackers and milk.
  • Place in a baking dish.
  • Sprinkle with cheese & bread crumbs.
  • Bake uncovered for 20 minutes or until the milk is absorbed.
