Pumpkin Pancakes/Waffles

2 cups of Flour
1/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
3 large eggs, separated
1-3/4 cups milk
1/2 cup butter, melted
1/2 cup pumpkin
  • Combine flour, sugar, baking powder, salt, spices. Set aside. 
  • Beat egg whites until stiff. (set aside)
  • Mix together the egg yolks, milk, butter, and pumpkin.
  • Fold in egg whites.
  • This batter can be used for a waffle iron or can make pancakes.
  • Serve with a dollop of butter and some pure maple syrup.
