Potato Salad



5-6 large potatoes (boiled, and peeled and cut into chunks)
2 ribs of celery
6 hard boiled eggs, peeled and finely chopped
1/3 cup of finely chopped sweet onion
4 sweet pickles cut into small pieces

mayonnaise (enough for desired consistency) I never measure, if you need a measurement start out with 1/2 cup and add 1 tablespoon at a time until you feel it's at a consistency that you prefer.

Mustard (start with 1 teaspoon, and add more if you want...again, I don't measure!)

Salt & pepper to taste.

Once in a while, I'll add a tablespoon of ranch dressing to give it a different twist.

Mix together all the above ingredients.
