Old Fashion Tomato Preserves



3 cups of tomatoes that have been scalded, peeled and chopped (2-1/4 lb)
1/4 cup lemon juice
4-1/2 cup sugar
1 box Sur-jell fruit pectin
1-1/2 teaspoon grated lemon rind
1/2 teaspoon cinnamon
1/2 teaspoon all spice
1/4 teaspoon ground cloves.

  • Cover & simmer tomatoes for 10-15 minutes.
  • Measure 3 cups and place back into a saucepan.
  • Add lemon juice, grated lemon rind, allspice, cinnamon and ground cloves.
  • Stir sure-jell into tomatoes.
  • Bring to a full boil over over high heat, stirring constantly.
  • Add sugar. Bring to a full boil. Boil for 1 minute. (A full boil can not be stirred down.)
  • Remove from heat.
  • Skim off the foam. Ladle into hot sterilized jars, leave 1/2-inch space at top.
  • Cover with sterilized lids.
  • Water bath for 20 minutes.
I made this back in 2005. My husband really liked it. He would put it on crackers.
