Morning Glory Muffins



4 eggs
1-1/2 cups vegetable oil
1 teaspoon vanilla
3 cups flour
1-1/4 cup brown sugar
3 teaspoons baking soda
3/4 teaspoon baking soda
3/4 teaspoon salt
3 teaspoons cinnamon
3 cups shredded carrots
3/4 cup flaked coconut
1 large apple, shredded
1/2 cup nuts
1/2 cup raisins

Preheat oven to 350°

  • In mixing bowl beat eggs, oil, and vanilla.
  • Add remaining ingredients; mix until just moistened.
  • Spoon into a greased muffin tin.
  • Bake for 15-20 minutes.
I got this recipe from my daughter; she got it from an Amish cookbook.
