Coffee Cake Muffins


1 stick of butter at room temperature
8 oz of sour cream
1 cup of sugar
1 teaspoon vanilla
2 eggs
 1 - 3/4 cup flour
2 teaspoons baking powder


1 cup of dark brown sugar
1 cup of flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 stick cold butter

Powdered sugar for dusting.
  1. Preheat oven to 350°
  2. Whisk together: flour and baking powder. Set aside.
  3. Cream room temperature butter, sour cream and sugar.
  4. Add eggs, one at a time.
  5. Add vanilla.
  6. Add flour mixture. Beat well.
  7. Fill tin 1/2 full. Put strudel in the middle. Put more batter on top of that.
  8. Top with more strudel.
  9. Bake for 25-30 minutes.
  10. When cool, dust with powdered sugar.
