Citrus Buttermilk Pancakes With Blueberry Sauce

To make Fruit sauce:

 3 cups of blueberries, fresh or frozen
2-4 tablespoons sugar

  • Simmer over med-high heat until syrupy. Add a touch of lemon juice (to taste) Keep warm until ready to serve.

1-1/2 cups flour
1/4 cup cornmeal
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons better, melted
1 egg, separated
1-3/4 cup to 2 cups buttermilk
2 teaspoons fresh grated lemon zest and 2 tablespoons lemon juice or 1 tablespoon fresh grated orange zest and 3 tablespoons orange juice.

  1. Combine dry ingredients, add butter and citrus zest. Mix well.
  2. Beat the egg white until soft peaks form. Set aside.
  3. In a separate bowl whisk together: egg yolk, buttermilk and citrus juice. Add to dry ingredients.
  4. Fold egg whites into mixture.
Cook pancakes in heated skillet and top with butter and fruit sauce.

I haven't tried this, but my daughter has and it is a family favorite of hers. I bet this would be good if blueberries were substituted with most other kind of berries. (Strawberry, blackberry, raspberry etc.)
