Breakfast Cookie



Serves 1


Preheat oven to 350°

Combine:
1 tablespoon brown sugar
1/4 cup chopped dates or raisins
1/3 cup oatmeal
1 tablespoon whole wheat flour
1/3 cup fat free dry milk
1/4 cup pumpkin
1/4 teaspoon pumpkin pie spice 1/4 teaspoon baking powder
1 egg
1 teaspoon canola oil

Spread as thin as possible on a baking sheet and bake for 15 minutes.

To make 1 teaspoon of pumpkin pie spice:
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon nutmeg
