Amish Potato Rolls



3 potatoes, peeled & cooked. (save water that potatoes are cooked in)
1/2 cup butter
1/2 cup sugar
1 egg
1/2 teaspoon salt
1 pkt or 1 tablespoon of yeast  (dissolved in lukewarm reserved potato water)
3-1/2 cup flour
  1. Mash potatoes while still hot with the butter.
  2. Add sugar, egg, salt, yeast and potatoes water.
  3. Slowly add flour.
  4. Knead for 10 minutes and let rise until double in bulk.
  5. 1-1/2 to 2 hours.
  6. Punch down.
  7. Divide dough into 4 sections. Each section will make 4 rolls. (16 rolls total)
  8. Divide dough into 4 pieces.
